My Chicken and Rice Recipe

Chicken and Rice

4 chicken thighs, with bone and skin
5 chicken drumsticks, with bone and skin
1 T. olive oil
1 med onion, chopped
3 1/2 c. chicken broth
1 1/4 c. water
1 can condensed cream of chicken soup
2 c. white long grain rice, uncooked
salt, pepper, and seasoned salt - to taste


  1. In a medium stock pot, heat oil on medium heat.  While oil is heating, season chicken with salt, pepper, and season salt. 
  2. Place chicken in pot, cook chicken until slightly brown on both sides, 2-3 mins per side.  (You may have to do in batches).
  3. Remove chicken from pot, add onion and cook until it starts to soften.
  4. Add broth, water, and condensed soup to pot with onion.  Stir.
  5. Add chicken to the broth mixture.
  6. Add rice to the chicken and broth.  Stir.
  7. Increase heat to med-high and bring to a boil.
  8. Season to taste.
  9. Once at boil, reduce heat to a simmer and cook until rice is done.  Approx 20 min.
  10. When rice is done, serve and enjoy!

This is a dish that I grew up with.  I have changed it slightly from my mom's recipe but overall it is the same.

You can make your own changes if you like.  You can change the condensed soup to mushroom or celery.  You can even add chopped celery and/or garlic.  I use thighs and drumsticks because of the flavor that these pieces of chicken give to the pot that breasts do not.

You can also change the type of rice.  However, if you change the rice please make sure you adjust your cooking time accordingly.
